Corn and Guacamole Bowl Recipe

Instructions

  • Cook the corn on the cob for 10 minutes in boiling water.
  • Take the corn out of the water and set it aside to cool.
  • Remove the corn kernels from the cob and place them in a large mixing bowl.
  • To the bowl, add the diced avocado, red onion, red bell pepper, and cilantro.
  • Squeeze the lime juice over the mixture and mix well.
  • Season to taste with salt and pepper.
  • Enjoy the corn and guacamole mixture in bowls.
